May – Ironbark Dry Gin

Gin – Ironbark Dry Gin

Distillery – Ironbark Distillery

Description – Al Chemist (Reg Papps) has created a fantastic gin here. When we say created, we mean it in the true craft sense.

Reg distils using a vapor infusion method layering the botanicals in a specific order to create this gin. Rather than a complex array of botanicals Ironbark uses just five: juniper, coriander, cardamom, lemon zest and vanilla.

Our first impression when trying the gin for the first time is that it has a softness and smoothness to it that’s pretty unique.

Where Loch has a creaminess to it (our other favourite sipping gin), Ironbark just melts onto the tongue with a full flavour profile and long finish.

It’s been described as elegant and we don’t disagree in the slightest. You’ll find juniper, pine, citrus and pepper melded together perfectly.

Our suggestion is don’t do too much with this gin. Keep it simple. If you have to make this as a G&T, Fevertree is your best option. Garnish it with a simple lemon peel, a slice will overpower it.
